I have a PhD in Chemistry and am a student of historical finishing technologies. I’ve also been a woodworker and woodcarver for nearly 50 years and have made a lot of kitchen items and utensils in wood. Centuries of trial and error provided suitable finishes to our woodworking ancestors. In the last 100 years an explosion of new finishing technologies has occurred and many of these finishes are not food-safe.
